Local, seasonal produce is selected from attentive producers who share our taste for excellence.

Aubrac meats, free-range poultry and the day’s catch from Gruissan are offered by the piece.

Grilling, flambéing and carving take place before the dining room, at the hearth counter.

Carefully selected woods, including vine stumps, allow for delicate smoking.

Elegant period tableware adorns the tables. Tureens and serving dishes, also dating from the early 1900s, invite guests to share gourmet dishes such as Lapin Chasseur, the signature dish—what a pleasure to help oneself again to the delicious sauces!

Generous country loaves, sliced to order, are served.

The condiments are equally considered at the table: selected peppers, fine and coarse salt from Gruissan, mustards, and olive oils from our estates.

A trolley of cheeses from local farms and Paule’s desserts bring the meal to a close.

A daily dish and wine are also offered on the blackboard, celebrating the market and the seasons, and inviting the discovery of new terroir pairings.

An atmosphere by Christian Collot

The authenticity and tradition of pale stone and wood are paired with contemporary design in Terracotta tones, creating a welcoming, warm atmosphere.

A rotisserie grill fireplace, crafted by a local artisan, presides over the stone-walled dining room.

The cathedral ceiling is adorned with beams and handcrafted terracotta light fittings.

The light oak furniture draws inspiration from the art of cooperage. Banquettes and round tables encourage conviviality.

A period dresser displays the Gérard Bertrand wine collection. An adjoining patio offers terrace lunches, extending the summer’s pleasures.

The dining-room team wear relaxed beige chino attire, white Mao-collar shirts and blouses, and denim aprons, evoking bistronomic service and paying tribute to Nîmes’ celebrated regional fabric.

CHEZ PAULE, HERITAGE OF LANGUEDOC

Pays tribute to Paule Bertrand, born on the symbolic date of 1 January 1900. The first generation at the origin of the Bertrand family’s winemaking tradition, she planted in 1920 the now century-old Carignan parcel, foreshadowing the birth of the Villemajou estate.

The life she led with courage and boldness is intertwined with the great historical and wine-making events of the last century, at the head of a family of nine children. In a handwritten journal intended for them, she recounts the anecdotes that punctuated her life in the Corbières and, like Proust’s madeleines still vivid in Gérard Bertrand’s memory, the delicious recipes she lovingly prepared for family meals.
