Our Mediterranean menu pays tribute to the authenticity and richness of local flavours. We begin by welcoming you with a taste of our hospitality: a selection of refined olive oils and Gruissan salt at your table. Our local produce is meticulously selected, including that from Ferme de Celeyran, ensuring a rich culinary experience.
For lovers of gastronomic discovery, our selection of Mediterranean classics with an international touch — mezze, tapas, bellota staves, focaccia, pasta al vongole — draws inspiration from Greek, Lebanese and Italian traditions. Each dish celebrates the region’s intense, sun-drenched flavours.
Sturia caviar, accompanied by our sturgeon spreads, is a luxury to savour. And to conclude on a sweet note, our signature and sharing desserts provide the perfect epilogue to a memorable meal.

A Mediterranean immersion
Our bar stands apart as an ambassador for a new genre of wine cocktails. Creations such as the Golden Sunset, the Cote des roses Margarita, the Bloody Maury, the Espresso Banyuls, and many more, embody the spirit of our ‘Sea Wine & Sun’ brand, inviting our guests to embrace a land of setting suns and shimmering waters.
These original cocktails, crafted from bold new ingredients, invite the senses on a journey, lulled by the sea breeze and bathed in the golden light of the coast.

EVENTS AND BEDS
Sunlit vibrancy
We transform our venues into living stages, where music becomes the universal language of our identity, telling stories that resonate beyond the present moment.
During the week, from Monday to Thursday, unwind in a lounge atmosphere accompanied by chill house music until midnight—a promise of escape and relaxation by the water.
At weekends, the night comes alive to a house disco atmosphere from 11.30 pm to 1.30 am. Let yourself be carried away on Fridays with Get Phreaky and Saturday’s Beach Fever !
On Sundays, we invite you to our La rosé gathering, for a day from midday in an atmosphere that is both convivial and festive. A perfect balance of relaxation and sunlit energy, orchestrated by our DJ, to bring the week to a beautiful close.
Our menu and events are designed to delight and engage, inviting you to rich and varied moments of indulgence in a setting that celebrates the spirit and warmth of our coastline.

THE CHOICE OF LOCAL PRODUCTS
Thanks to his team, the Chef selects the finest local suppliers in order to serve his guests the very best quality.
All vegetables come from the Occitanie region. Some vegetables and aromatic herbs come directly from the Château’s kitchen garden or the La Clape massif.
The restaurant therefore serves Aubrac beef, Pyrenean lamb and, naturally, fish caught in the Mediterranean Sea.
Working as much as possible with organic produce, the Chef makes a point of respecting the rhythm of the seasons when selecting the ingredients he works with.

THE CHOICE OF SEASONAL PRODUCE
Sharing platters, vegetarian dishes, oysters from the Thau lagoon, fish tartares, beef carpaccios, beautiful fresh salads, poke bowls…
For the classics. The chef also favours market cuisine, according to the day's arrivals, for a few exceptional plates. Fish: seared tuna, sea bass, sea bream. Meat: Pyrenean veal chop, sage lamb chop or Aubrac beef.
The extensive wine list offers the opportunity to discover Gérard Bertrand wines, including several great cuvées served by the glass for sheer pleasure.
Ballets of Gris White rosé jeroboams or Code Red sparkling wine in the setting sun, when the "blue note" takes precedence over the waves as they drift into the night. Magical moments.
