The Tables to Explore 2026 award presented by La Liste honours restaurants that deserve to be discovered for the distinctiveness of their gastronomic experience and the inspired interpretation of their *terroir* or culture. The Special Awards by La Liste celebrate talent, vision, craftsmanship, and auteur cuisine.

Set in an exceptional natural environment at the heart of the La Clape massif and its biodynamically cultivated vineyard, Château l’Hospitalet Wine Resort Beach & Spa is home to the restaurant L’Art de Vivre, in Narbonne, in the South of France.

The restaurant L’Art de Vivre, already distinguished with a Michelin Green Star, intentionally offers a limited number of covers to provide an intimate, precise, and harmonious experience in keeping with the chef’s philosophy.

An accolade celebrating the Vertical Cuisine of Chef Laurent Chabert

This distinction awarded to the restaurant L’Art de Vivre highlights the singular approach of Chef Laurent Chabert, which he himself calls Vertical Cuisine: a philosophy that regards the plate as the culmination of an entire ecosystem—from soil to plant, from plant to artisan, and from artisan to the culinary gesture.

Vertical Cuisine unfolds around five fundamental pillars:

  • The Living: a cuisine that begins in the soil and follows natural cycles. In the restaurant, the menus evolve daily in harmony with the kitchen garden, the climate, and the true rhythms of the seasons.
  • Connection: a close, enduring relationship with an esteemed circle of producers—farmers, fishermen, breeders, and artisans—including the Celeyran biodynamic farm.
